    I think you'll have to trace out those cables, perhaps with a multimeter, to work out their functions.

    How comfortable are you with electrics?

    If you're not, consider getting a heating engineer to do the installation for you.

    I would say that wiring centres always look more complicated than they actually are. Once you know what type of system you have S/Y plan, gravity fed, combi ... then you can look up the standard wiring for that and working methodically, you can identify what each wire is for.
